At Fire & Glaze, our mission is to redefine open-hearth grilling to rival the grand tasting menus of Tokyo, Paris, and San Francisco. We dry-age our choice cuts under specialized mineral-salt moisture walls, locking deep umami esters inside before subjecting them to cherry and applewood flares.
Our signature glazes are created using bone extractions simmered for 72 hours, balance-tuned with small-batch sakes, raw wild honey, and mountain peppervines.

Fire & Glaze started as a devotion to high-heat charcoal kinetics. Our founder sought to match the structural refinement of traditional Japanese hibachi grilling with the slow smoke retention profiles of European peachwood hearths.
By controlling the specific humidity inside our dry-aging chambers with Himalayan rock salt blocks, we develop incredibly rich, tender flavor profiles. The choice cuts are finished on open, searing-hot grates using premium white-hot binchōtan charcoal.
